Time for Fall!

Fall is here, and you know the drill: The leaves start to change colors, the weather gets a little colder, and our appetites change from grilled burgers and ice cream to foods that warm and comfort us. Here are some fall recipes for everyone to enjoy!

Caramel Apple Cider Martini

Martini Cider

Butternut Squash Bisque

1 butternut squash

1 acorn squash

1 tablespoon butter

1 ½ teaspoon chopped garlic

1 cup chopped spanish onions

½ cup thinly sliced carrots

1 tablespoon brown sugar

2 cups chicken stock

¼ cup heavy whipped cream

½ teaspoon curry

½ teaspoon salt

½ teaspoon black pepper

1 tart apple

Preheat oven to 350 degrees.

Cut the squash in half and remove the seeds using a spoon.

Line a baking sheet with tin foil and place the squash, cut-side up, on the sheet. Lightly drizzle with butter, place garlic, onion, carrot, and brown sugar in each crevice of the squash. Cover squash.

Place in the oven and roast for 1 to 1 ½ hours or until you can easily insert a fork into the softened flesh of the squash. Remove from the oven and allow to cool.

Once cool, scoop out the flesh of the squash using a spoon and discard the skin.

In a medium-sized pot, add the squash and blend in cream, curry, and chicken stock slowly. Heat mixture until hot, but do not boil.

Add salt and pepper.

Garnish with thinly sliced apples
